Highland Lamb Processing Plant



Scotch Premier's EU approved facility at Royal Dornoch in Sutherland, officially opened on 1st October 2002, is dedicated to the processing of high quality lamb from the Highlands and Islands of Scotland.

There are currently approximately 14 staff employed at the premises, which currently handles approximately 2000 lambs a week, but it is anticipated numbers will increase to 51 when full production of 5000 lambs a week is reached.

Scotch Premier Highland Lamb production is based on a unique partnership initiative involving lamb producers, finishers and processors. Key to this Initiative is the dramatically shortened supply chain - a widely recognised factor in reducing animal stress resulting in a product with greatly improved eating quality.

The aim of the partnership is to provide consumers with tender, succulent lamb which has all the flavour and taste you would expect from stock, traditionally reared in the natural environment of the Scottish Highlands and Islands.

Working in co-operation with Livestock societies and Producer Co-operatives throughout the Highlands and Islands, lambs are selected and transported to finishing units close to the Dornoch facility, where they are "grown-on" to meet Scotch Premier's target EUR grades.

The close proximity of the plant in relation to the finishing units is much more "welfare friendly" with shorter journey times for livestock and, consequently, significantly reduced stress on the animals.

Producing Scotch Premier Highland Lamb of consistently high quality demands attention to detail at every stage of production from rearing through to selection, transportation, finishing, processing maturation and distribution, and consequently, our state-of-the-art processing facility at Dornoch operate rigorous and comprehensive quality assurance and quality control schemes all the way from the farm through to the end user.

Scotch Premier Highland Lamb is naturally reared, succulent, tender, full of flavour and is a product of consistently high quality - qualities demanded by today's consumers.

 

Scotch Premier's sister company, H & I Livestock Ltd (HILL), based in Inverness, have been appointed procurement agents for the Dornoch plant to ensure that quality standards are rigorously adhered to.
