Fair deal for wine lovers at the Barn & Bushel


wine Discerning diners at Thainstone Centre's prestigious Barn and Bushel restaurant have welcomed the introduction of a novel approach to pricing wine which is de-mystifying the traditional restaurant wine list - and giving diners a better deal.


Most restaurants add a set percentage to the purchase cost of wine to cover their overheads which means the more expensive wines generate a higher margin than cheaper wines.


But the Barn and Bushel's extensive wine list - featuring top vintages from Australia, New Zealand, South Africa, Germany, France, Italy, Spain, Argentina and Chile - shows the actual cost price to which a standard service charge of £8.00 per 75cl bottle (including VAT) is added irrespective of the cost of the wine.


We believe ensuring total price transparency is a fair and novel way of opening up our wine list to all our diners, says Highland Cuisine General Manager, Mark Poole. Nowadays the public can access a huge range of wines from all over the world on supermarket shelves. Access to these wines should not be restricted when eating out by unacceptably high mark-ups on wines featured on restaurant wine lists.


The price listed on the Barn and Bushel wine list is the exact price - no more, no less - which Highland Cuisine pay to their wine merchant.


And Mr Poole has no objection to diners bringing along their own wine, subject to the standard service charge of £8.00 per bottle.


The service charge does not apply to the Barn and Bushel's four featured house wines from the 122-year-old Santa Rita winery in Chile which sell at £13.00 per bottle.


The Barn and Bushel's Saturday night Taste of Grampian dinners and Sunday carvery lunches are becoming increasingly popular and attract large numbers of diners every week-end. The restaurant is available for private functions and conferences at other times.
