At the 2006 Scotch Premier Meat Ltd Christmas Carcase Show on Monday
(December 4th), the supreme championship went to Messrs W. A. Fettes,
Braes of Enzie, Buckie.
The event was officially opened by Quality Meat Scotland
chief executive Uel Morton who announced the launch of a new website
for Quality Meat Scotland’s Scotch Butcher’s Club and
it can be accessed at www.scotchbutchersclub.org
The supreme champion from Braes of Enzie was a Limousin
cross steer which scaled 376.1kg and sold for £3,800 to Aubrey
Allen of Coventry.

The overall reserve champion came from J. Lunan, Milton of Gaval,
Mintlaw and the 361kg Limousin cross steer was bought by show judge
Alan Woodward for £2,100. He was assisted in judging by Brian
Randalls from Fulham.
Commenting on the show, Alan Woodward said: “What
I am looking for is conformation, a degree of finish and succulence
of meat – that is more important than the shape of the carcase.
Conformation gives profitability but texture and flavour give customer
satisfaction.
Brian Randalls, who lists celebrity chef Gordon Ramsay among
his customers, added: “As a customer of Scotch Premier I am
used to the quality and standard of beef that the company supplies
– I only sell Scotch beef. The main thing I am looking for
in a top carcase is good conformation.”
Exhibiting the champion Highland Lambs was R. Wilkie of
Tillyboy, Echt and the pair – which weighed 40.5kg –
sold for £500 each to judge Charles Macleod from Stornoway.
Meanwhile, the reserve champion pair of Highland lambs from Shona
Milne, Parkdargue, Forgue, Huntly, tipped the scales at 36.5kg and
sold at £400 each to Aberdeen’s Laidlaw Butchers.

In the pork section, the overall championship went to R.
C. M & R. D. Maitland, West Balhalgardy, Inverurie for a 59kg
carcase which realised £620 to Oldmeldrum butcher Gordon Presly
and the reserve championship went to Carden Livestock, Conglass,
Inverurie for a 52kg offering which was bought by Deliserve, Rogertson,
Newport for £380.
